The first Middle Eastern meal which was introduced in Europe was for sure pita bread with shawarma meat and real garlic sauce.
Prepare the garlic sauce with 4 table spoons of light yoghurt, 1 egg, 2 finely chopped garlic cloves, some olive oil, pepper and salt in a blender. Add some lemon juice and fresh parsley. Store in the fridge for at least 1h to intensify the flavor.
The shawarma spices can be bought ready made, or you mix a few herbs together and try to find a good balance. A mixture of 1 teaspoon of grinded coriander, 2.5 teaspoons of grinded cumin, 2 teaspoons of paprika powder, 0.5 teaspoon of cinnamon powder, 0.5 teaspoon of curry powder and a pinch of salt is a perfect start which you can store. Chop 250 grams of chicken filet in small pieces. Add 2 teaspoons of the mixture, 2 chopped garlic cloves, 1 chopped pepperoncini and 1 chopped small onion. Marinate the meat for approx 30 mins. Bake in olive oil until ready and crispy.
Serve the meat and the sauce with iceberg salad, radishes, cucumber, tomato, raw mushrooms, …on a hot flat bread or pita bread. PS Iris starts with the sauce, I prefer to finish with the sauce;-).
