Talking about living in Italy with Italian friends is so much easier while eating ;-). My starter and dessert were finished before thinking about taking a picture, so those recipes will wait for a later occasion.
The main dish is a perfect dish to prepare in advance.
Fregola is a typical pasta from Sardegna and looks like mograbiah which is a large couscous. Boil the fregola (couscous is even much easier to prepare).
Chop 1 red onion in tiny pieces. Add the onion, the zeste of an orange and 100 grams of raisins immediately to the drained fregola (by doing this the onion will be less sharp and the raisins and zeste will become softer). Add 70 grams of grinded pistachio, pepper, salt and a drizzle of olive oil. Store at room temperature.
Blend 250 grams of tomatoes with 2 table spoons of almond flour, a handful of fresh basil and 1 garlic clove. Add pepper and salt. Cheese is optional, but is not absolutely necessary for a fresh flavor. Store the mixture in the fridge.
At the moment the starter is ready to serve, put 1 kilo of large cherry tomatoes in a large oven dish. Add a drizzle of olive oil and a few unpeeled garlic cloves. Put the dish in the oven at 200° for 20 mins. Spread 1 kilo of a firm white fish (we had tail fish) chopped in large cubes in the oven dish for another 15-20 mins. Finish with fresh basil, pepper and salt.
Serve the fregola, the fresh tomato almond sauce and the fish together while enjoying the nice company.
