It’s Wednesday. I’m preparing my shopping list and inspecting the fridge. The market in Castelnuovo Berardenga will still allow the food stalls, what a great news.What’s left in the fridge : the central part of a green cabbage ( good for 350 grams of vegetables), a few spring onions and 6 large cherry tomatoes. I want sausages and thus Iris will have some vegetarian substitute.Chop the sweet potatoes in cubes. Spread in 2 different oven dishes. Add some oil. Bake at 180° for 15 mins. Stir. Bake for another 15 mins. Add the chopped green cabbage, 4 chopped garlic cloves, 2 chilis, a few fresh thyme stems. Divide on the 2 oven dishes. Stir. Add some pepper and salt. Spread 2 chubby chopped italian sausages on one of the oven dishes. Bake for another 15 min. Stir. Add the vegetarian substitute on the other oven dish. Spread the halved cherry tomatoes. Bake for another 15 min at 180°. Cover if necessary.PS I found 3 tiny courgettes in the garden…they join the dish 😉Looks remarkable for a vegetarian dish, don’t you think. By the way, it tastes really good.The sausages are uncompetitive, I’m really sorry.
