Farro or spelt is a nutrious ( perfect food for a gluten free diet ) and local ingredient. A lot of healthy eating Italians eat farro instead of pasta at lunch.
The recipe, inspired by the magazine of the supermarket Coop, is not only healthy but also delicious and beautiful.
Defrost and dry 600 grams of large, peeled scampi. Remove the intestinal canal. Marinate in 1 teaspoon of turmeric powder. Bake crispy in a drizzle of olive oil.
Peel and chop 1 ripe mango. Peel and chop 1 large avocado and mix with some lime juice.
Boil 180 grams of spelt for 3p until al dente. Chop and fry 4 garlic cloves, 2 chili, 4 cm of fresh ginger and 2 yellow bell peppers ( use the same pan for extra color. Spread some stems of fresh thyme.
Mix the spelt with the scampi, the avocado, mango and bell pepper. Finish with fresh lemon basil, nigella seeds and wedges of lime.
