500 grams of tasty radicchio from Treviso (the real stuff) and a lucious cheese (mixture of gorgonzola and mascarpone= really lucious!) are perfect ingredients for a quick risotto.
Fry 1 chopped white onion and 4 chopped garlic cloves in a mixture of butter and olive oil. Add 120 grams of good risotto rice. Stir and add 100 ml of white wine when the rice is glazy. Allow the wine to evaporate. Add the chopped radicchio. Stir. Add 400 ml of good quality chicken or vegetal stock, bits by bits and stir regularly. In 15-20 mins time you get a perfect risotto. Add a handful of chopped basil and parsley. Add the lucious cheese at the very end. Yummie comfortfood.
