I’m completely out of my routine after 6 days of traveling to Belgium. Nobody forced me, so I have no reason to complain, and I can’t say that my dear wife didn’t try to convince my that I would better wait a little longer…. Anyway, I did it, enjoyed my awesome stay in Bazel with family, but it took me a few days to ‘recover’.
A simple fresh whole fish with roasted vegetables is an easy way to start. Chop 2 red onions, 500 grams of sweet bell pepper, 4 garlic cloves, 1 chili in larger pieces. Clean 500 grams of potatoes. Cut them in wedges. Spread on baking paper. Mix with 2 table spoons of olive oil. Bake in the oven at 200° for 20 minutes. Stir. Add the chopped vegetables and a few stems of fresh rosemary. Bake for another 20 minutes. Stir. Chop 250 grams of cherry tomatoes in halves. Add to the oven tray. Bake for 10 minutes. Season with pepper and salt. Add the fish ( seasoned with pepper and salt)to the tray. Bake for 20 minutes. Enjoy!
