To ease my life I usually buy ready made dough for my pies, although I know that a homemade dough can be personalized with some lemon zeste, or extra flavor.
Cover a round pie oven recipient with the dough on the baking paper. Make a few holes with a fork.
Mix 500 grams of ricotta, 175 grams of Philadelphia light, 4 eggs, 1 small portion of vanilla sugar, 1 teaspoon of baking powder and 75 grams of icing sugar. Mix. Pour the mixture in the dough. Bake in the oven at 200° for 50 minutes (cover with aluminium foil if the surface becomes too dark). Stop the oven. Leave the pie in the oven while leaving the door slightly open.
Store in the fridge. Enjoy a few afternoon teas or an afternoon teatime with a few. 😉
