Cheese cake in an alternative version

The weather forecast is not really promising. Before closing all shutters we manage a dry lovely walk nearby. Oskar has loads of energy and loves being outside.

The rest of the afternoon I’ll spend in the kitchen enjoying myself 🙃.

A cheesecake without carbs is manageable.

Mix 100 grams of almond flour and 100 grams of hazelnut flour. Add 75 grams of soft butter, a pinch of salt, 1 egg and a few drops of artificial sugar. Mix until a smooth firm dough. Spread in a springform covered with baking paper.

Bake in the oven at 180° for 15 minutes.

In the meantime mix 250 grams of ricotta, 500 grams of low fat Greek yogurt, the zeste of 1 lemon, vanilla extract, 2 eggs and liquid artificial sugar until you obtain your desired sweetness.

Pour the mixture on the dough. Bake at 180° for 45 mins. Cool down. Serve with blueberries.
