Raw, grilled, cooked, boiled, …fresh artichokes are a real delight.
5 euro for 6 large babies is a perfect portion served as a main course for 2p. The following recipe I read in the beautiful cook book, Vegarabia, written by Greg and Lucy Malouf.
Clean the artichokes (remove the hard leaves, part of the stem, skin of the stem and upper part of the leaves. Cut in quarters and store in cold water mixed with the juice of 1 lemon.
Clean 400 grams of potatoes, cut in large cubes and spread in an oven dish. Add 6 shallots, cut in quarters. Add a few stems of fresh thyme, 2 bay leaves, 4 sliced garlic cloves, 1/2 of a teaspoon of grinded coriander seeds, chili flakes, 150 ml of with wine, 150 ml of water, 1 cube of vegetal stock and the drained artichokes. Mix all together. Add a drizzle of olive oil. Cover the dish. Bake in the oven 200° for 30 mins. Remove the dish from the oven. Stir. Put back in the oven uncovered. Bake for another 20-30 minutes.
Mix 100 ml of light cream with 30 grams of grated parmesan, the zeste of 1 lemon and black pepper. Put in a small oven recipient. Cover. Put in the hot oven during the last 5-10 mins of baking time, until the cheese has melted.
Spread the cheesy cream and a handful of fresh basil. Serve.
