I love eggs. We probably consume 10 eggs weekly (2p), and this is not because we live in Italy.Anyway, no eggs in the supermarket yesterday…thus today I’ll try an egg free cake based on a few ideas which I found on internet.Chop 2 apples in small pieces. Mix with the juice of 1/2 of a lime or lemon. Put a few minutes in the microwave. Cool down. Add 180 grams of sugar, 200 ml of low fat yogurt, 90 ml of sunflower oil, 1 teaspoon of vanilla sugar, 1/2 of a teaspoon of baking soda and a pinch of salt. Mix with a fork. Add 250 grams of seefed selfraising flour. Mix until you obtain a smooth mixture.Put in an oiled silicone form. Bake in a preheated oven at 170Β° for 50-60 minutes, until the inside is ready. Cool down, remove from the cake form.Enjoy something sweet with your afternoon tea during the following days.
