For 2p chop and fry 1 red onion, 4 garlic cloves, 1 chili and 2 medium sized bell peppers. Add 2 teaspoons of cumin seeds and 2 teaspoons of garam masala. Bake and stir. Add 1 can of cherry tomatoes and 100 grams of barley. Rinse the can with a small amount of red wine. Add to the vegetables. Allow to simmer for approx 20 mins until the barley is al dente. Taste, add pepper and salt. Add 1 drained can of
borlotti beans.
Finish with chopped basil and fresh ricotta.
