Perfect painting but don’t forget to cook😉

Gerda is leaving tomorrow. We did a great job. I learned how to paint doors in the most perfect way. We were outside during most of the day ( amazing, we are only February). But what about our dinner?

Luckely we have a small supermarket nearby. You know, the one where they prepare me fresh minced chicken meat.

Chop 3 medium sized eggplants. Mix with 1 table spoon of dried thyme, 2 chopped garlic cloves and a drizzle of olive oil. Mix and spread on baking paper. Bake in the oven at 180° for 45-60 mins. Stir now and again.

Mix 400 grams of minced chicken meat with 100 grams of sausage meat. Mix with 1 table spoon of dried oregano, 2 teaspoons of chicken herbs. Oil your hands and roll meatballs of approx 3 cm. Put on baking paper. Bake the balls in the oven for 20 mins.

Chop 4 medium sized courgettes and 2 garlic cloves. Put in a large oven dish. Add a drizzle of olive oil, a few stems of fresh rosemary and 1 table spoon of dried basil. Remove the balls and bake the courgettes for approx 20 mins. Mix courgettes, eggplant and balls and a portion of ready made gnocchi for 2-3. Taste, add pepper and salt. Spread 150 grams of mozzarella cubes.

Put back in the oven for another 15 mins.

Enjoy this meal with 3 hungry people or 4 less hungry people.
