After 2 years of living in Italy we feel it’s time to settle for a bit longer. House in Belgium is for sale, a new house in one of the most beautiful places of Tuscany, Castelnuovo Berardenga, is recently officially ours. A project for both of us, with space for visitors, space for me to start working again, not as a family physician but as doctor/counselor, space for a lot of cooking and other passions and ….an awesome view. Although we plan to do some small renovations, we start painting and refreshing that part of the house that will become the practice and our first place to start living.
In between normal life we pack, we take boxes to our house, we paint, we come back, eat, sleep,…All this to excuse myself if certain meals in the near future are quick and easy, but generally healthy.
Fruit and vegetables in between guarantee our daily amount of at least 500 grams pp.
Today the fridge is really empty, but the supermarket is closed. Garlic, chili pepper, pasta and salad offer us a rescue meal;-).
Chop and fry 6 garlic cloves (for 2p) and 2 pepperoncini in a large drizzle of olive oil. Add 1 table spoon of dried oregano. Boil 150 grams of pasta. Mix pasta with garlic/ pepperoncini. Taste, add pepper and salt. Pasta aglio, olio and pepperoncini is ready.
